Courgette Coconut Soup

Ingredients

  • 3 Medium courgettes Approx. 700 g
  • 3 Spring onions
  • 4 Large garlic cloves
  • 1 tsp Oil
  • 2 tsp Thyme
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 1 Handful of fresh basil leaves
  • 1 (400 g) Can of low fat coconut milk
  • 240 ml (1 cup) Water
  • A squeeze of fresh lemon juice to taste

Instructions

  1. Roughly chop the courgettes, spring onions and garlic cloves.

  2. Add oil to the pot and place on a high heat. Add spring onions and garlic cloves then stir till golden and fragrant.

  3. Fold the chopped courgettes, thyme, salt and black pepper into the spring onions and garlic. Stir occasionally until the courgettes start to brown. This should take 5 minutes or so.

  4. Add the basil, coconut milk, water and lemon juice into the pot and place a lid on top.

  5. Boil on a medium to high heat for 15 minutes, stirring halfway through.

  6. Place the soup into a blender and puree till smooth.

  7. Serve and enjoy.
